Job description

Based at Mandarin Oriental, Doha within the Culinary Department in Doha, the Commis 2 Bakery is responsible for executing bakery production tasks such as preparing croissants, viennoiseries, breads, muffins, scones and pastries with precision and care.

Under the supervision of senior chefs, the Commis 2 Bakery ensures consistency, freshness, and presentation while adhering to food safety regulations and supporting the team s operational goals.

As Commis 2 Bakery, you will be responsible for the following duties:

Prepare daily mise en place for the bakery section including doughs, bread rolls, viennoiseries, and breakfast pastries.

Follow recipes and instructions provided by the senior bakery chefs, ensuring consistent quality and portioning. Operate bakery equipment safely and efficiently, including mixers, proofers, ovens, and dough sheeters.

Monitor baking times and temperatures to produce optimal results in texture and color.

Maintain a clean and hygienic workstation, complying with HACCP and hotel food safety standards Label and store all ingredients and baked items according to the hotel s storage guidelines Assist in receiving and organizing bakery supplies and ingredients. Collaborate with team members and support other kitchen sections when needed.

Attend training sessions and team briefings to develop skills and align with departmental goals. Uphold Mandarin Oriental s grooming and behavior standards at all times.

Ensure the pastry and bakery team delivers excellence in service, creativity, and team collaboration. High School qualification or equivalent required.

Degree or Diploma in Culinary Arts or Bakery is preferred. Minimum 1 year of experience in a hotel bakery or high-volume bakery production is preferred.

Knowledge of bakery production methods including fermentation, proofing, and baking.

Ability to work in a hot environment and handle physical demands (e.g. lifting up to 15 kg).

Strong organizational and time management skills. Basic understanding of food hygiene and safety principles.

Proficiency in English; knowledge of Arabic or other languages is an advantage.

Ability to follow instructions, work under pressure, and remain focused during busy service hours.
